IVY STARK, who left New York for Chicago after a long stint as the executive chef of Dos Caminos, is back in town, now as a partner and the chef of John McDonald’s El Toro Blanco. She’s been given the green light for a complete overhaul of the menu. “Mexican food has been stuck in a rut, but with chefs like Enrique Olvera it’s ready to move forward,” she said. She says she feels that there is now more freedom to create at the higher end, where strict authenticity was long required. Some of the dishes she will serve starting in early March will be mashed black beans on a corn masa base, a Mexican version of beef tartare; cauliflower “fajitas”; and chile-roasted fish with a cucumber and citrus slaw.
